Aromi Restaurant And Terrace Balances Venetian Gastronomic Tradition With Local Sourcing And Culinary Expertise

VENICE - Opened in June 2007, Aromi Restaurant and Terrace is located at Hilton Molino Stucky Venice and offers authentic Venetian cuisine, with Mediterranean influence, created by Head France Luise. Located in the former grand entrance to Giovanni Stucky’s flour mill, guests will be inspired by the triumphant facade with the clock and statues decorating the upper section of the Molino.
Aromi has a locally inspired gastronomic tradition, with sourcing at the centre of the menu creation, more than 80 percent of Chef Luise’s ingredients and produce come from the local Rialto fish and vegetable markets. Chef Luise’s mission is to balance Venetian tradition with innovation using readily available ingredients. Daily catch seafood and prime cuts of meat are handpicked from the nearby markets and served with simple garnishes and fresh unmasked flavours.
Head Chef France LuiseA veteran chef with almost 30 years experience, Franco Luise began his professional career at 16 and crafted his profession in Italy until 1984, working in a number of restaurants including in the five star hotels Villa San Michele in Firenze and the Gritti Palace in Venice. He also worked in the three Michelin starred restaurant Antica Osteria del Ponte in Milan.
Chef Luise’s experiences abroad includes hotel Suvretta House in St Moritz, Switzerland, Reid's Palace (Trattoria Villa Cliff) in Madeira, Portugal and the Lodge at Vaile in Colorado. He is perhaps most noted for his role as executive chef of the legendary 60-seat Cip's del Palazzetto at the Hotel Cipriani in Venice and for opening the Cipriani restaurant at the Lapa Palace in Lisbon, Portugal - running it for five years. Prior to joining Hilton, Chef Franco was opening executive chef for Hotel Caruso in Ravello, Italy.
In June 2007, Chef Luise’s dream of running a restaurant in the Molino has become reality when Hilton Molino Stucky, Venice, a former 19th century flourmill opened following a four year, multi-million dollar transformation. Located on the island of Giudecca in the ‘SoHo’ of Venice, Aromi adds a first-class dining experience to the Venetian landscape.
Signature dishesAromi offers a seasonal menu (Spring, Autumn, Summer and Winter) and also a monthly changing ‘Chef Suggestion’ menu – based on ingredient availability in the local markets.

- A Venetian style cod mousse, with black rice wafers
- Sant’ Erasmo artichoke risotto and marjoram
- Aromi’s mixed fried fish ‘paper bag’ with squid, prawns, fillet of sole, carrot, courgette and onion rings.
- Tiramisu with coffee cream
Capacity and openingAromi can seat up to 60 guests inside and up to 130 guests on its beautiful waterside terrace. The restaurant is open all year round for dinner from 7:30 p.m. to 10:30 p.m.
AwardsAromi is listed in the famous Italian gastronomic guide ‘Ristoranti d’Italia Espresso’ amongst the most prestigious restaurants in Venice. The Aromi Restaurant and Terrace earned 15/20 score and one ‘Hat’ (a prestigious symbol which represents the category of the restaurant in the guide)
