36 Hours And 48 Desserts At Hilton Cardiff

CARDIFF, U.K. -  Each Sunday, she makes 48 different types of dessert for the lunchtime buffet at Hilton Cardiff. Between her and fellow chef Rachel Fisher, they clock up 36 hours every weekend creating their miniature masterpieces.

Pastry chef Rebekah, 23, said: “The Sunday lunch buffet had moved around and I had 35 plates to fill. I thought it would be nice to fill them all with different desserts.“It was a lot of work and at first we thought we should not have started it but we put all the desserts out and they look brilliant and people tell us how fantastic they are.

When you hear that it makes the hard work pay off and you realise it’s all worth it.  “At first our regulars were a bit unsure about the idea because the desserts were smaller but then they were saying how much they liked having such a big selection. Some keep coming back just for the dessert buffets. You can help yourself to as much as you like and not feel too greedy. You get to have five or six puddings rather than just one wedge of cake which I think is far more satisfying.”

Rebekah and Rachel make all the desserts from scratch both working nine hour shifts on Fridays and Saturdays. They start their preparations on a Friday, making the bases for the cheesecakes and the sponges and peeling the carrots for the carrot cake. Then on Saturday the rest of the work is done with two more hours to make the finishing touches on the Sunday.

Rebekah, who lives in Canton, in Cardiff, but is from Tonypandy in Rhondda, said: “We have a children’s corner full of sweeties and little cakes but we were quite surprised to see more adults in there than children. They get really excited by it and they love the crispy cakes and the sweets. The crispy cakes are probably the easiest thing to make and take just two minutes compared to the other intricate desserts but they always go down a storm. The children can’t believe their eyes when they see all the puddings either. Watching them fill up their bowls is a bit like Charlie and the Chocolate Factory, they love it.

“My favourite dessert is the profiteroles because I like Baileys but then the panacotta is nice and light after you’ve eaten a lot of food, and a trifle is always good too. But they are all miniature so I am allowed all three at least. I am definitely a dessert person.”

12. Frangipane: Almond tarts topped with either cherries or pears
13. Hot dessert: Varies between traditional favourites including bread and butter pudding, chocolate sponge, apple pie and sticky toffee pudding
